Meet the Pastry Chef

Cakes by Francesco Battaglia.

Francesco leads our cake and pastry team. Trained at George Brown College and apprenticed in Palermo under Master Pastry Chef Salvatore Cappello, he travels the world to learn from the best — and brings every technique back to the bench at Invergordon.

Every cake we make is from scratch — three layers of sponge, two layers of cream, a glaze, a finish. Whether it’s a single tier for a child’s birthday or a four-tier wedding centrepiece, the work is hands-on, every time.

The famous Sicilian seven-veils cake — hazelnut praline mousse, dark chocolate mousse, and a crunchy gianduia base.

Three layers of genoise sponge soaked in rum, two layers of flavoured custard cream, masked with 35% whipped cream.

Mocha Torte

Coffee-flavoured sponge with coffee liquor, coffee whipped cream, white chocolate shavings and toasted almonds on the side.

Opera

Layers of almond genoise soaked in coffee liqueur, coffee buttercream and dark chocolate ganache.

Black Forest Torte

Chocolate sponge soaked in kirsch, 35% whipped cream and fresh cherry filling, finished with shaved dark chocolate.

Tiramisu

Genoise sponge, mascarpone cheese filling and coffee-liqueur-soaked lady fingers. A reason to come in.

Pickup

Cakes are made fresh the morning of pickup. Two weeks’ notice recommended for wedding cakes and larger custom designs.
